Pumpkin Spice Granola Bars
These bars are perfect for breakfast or for a snack! They are healthy & delicious. This recipe makes chewy granola bars.
- 2 cups Oats
- 1 cup Whole Wheat flour
- 2/3 cup Brown Sugar
- 1/2 cup Wheat Germ
- 3/4 teaspoon Salt
- 1 teaspoon Pumpkin Pie Spice
- 1/2 cup Honey
- 2 teaspoons Vanilla
- 1/2 cup Canned Pumpkin
- 1/2 cup Canola Oil
- 1 Egg (beaten)
Preheat the oven to 350 degrees. Mix all of the dry ingredients in a medium size bowl. Next, mix in all of the wet ingredients. Make sure all of the ingredients are thoroughly mixed.
Spread the mixture in a greased 9x9 pan. I prefer using stoneware for this recipe. Pat with a spatula until the mixture is evenly distributed and flat. Bake in the oven for 30-40 minutes or until the edges start to brown.After you remove from the oven, allow them to cool for 5 minutes then turn the pan upside down and remove in one big piece. This is when the stoneware pan really makes a difference, mine come out so easy! Cut into bars and allow to cool completely. Store in an air tight container. The granola bars should keep for about a week or they can be frozen for up to 6 months.

ReplyDeleteI would like to try these but I don't have Wheat germ and honestly I really don't know what that is. Will this recipe work without it or is that a must??? Sorry if this question seems silly...;)
ReplyDeleteThat is not a silly question. You can make these without the wheat germ. Just add an extra 1/4 cup flour & 1/4 cup oats.
