TOMATO CHEESE PIE
Pie Crust (I like to use the recipe for Homemade Crescent Roll Dough Recipe here for the crust. You can also use the store bought Crescent Roll Dough, store bought pie crust or homemade pie crust.)
5 medium Ripe Tomatoes
1 cup Shredded Sharp Cheddar Cheese
1/2 cup Milk
1 teaspoon Salt
1/4 teaspoon Pepper
1/2 teaspoon Basil
Fill pie plate with alternate layers of tomato slices and cheese. Beat eggs and milk. Stir in salt and pepper. Pour over tomato & cheese in the pie crust. Sprinkle basil on top. Bake at 450 degrees for 15 minutes. Reduce oven temperature to 325 degrees and bake for 40 minutes until center is firm. Let stand 10 minutes before serving.
