Pumpkin Waffle Recipe


I absolutely love pumpkin!! My son loves pumpkin too but please don't tell him that pumpkin is a veggie and it is packed with vitamins. I plan on making a large batch of these waffles for the freezer later on this week. I love them because they are delicious and how else can you get a child to eat a full serving of veggies at breakfast and not even know it (Sshhhh don't tell Connor ; ) .


Pumpkin Waffles

  • 1 cup Whole Wheat Flour
  • 1 cup All Purpose Flour
  • 3 Tablespoons Brown Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Pumpkin Pie Spice
  • 1 1/2 cups Milk
  • 1 cup Pumpkin
  • 1 Egg
  • 2 Tablespoons Canola or Peanut Oil
  • 1 1/2 teaspoons Vanilla
Mix together milk, pumpkin, egg, oil & vanilla in a bowl. Combine flour, brown sugar, baking powder, baking soda, and pumpkin pie spice in another bowl. Stir dry ingredients into pumpkin mixture until well blended. Let the batter rest for 2-3 minutes. Cook on waffle iron according to waffle iron directions. Enjoy plain, with butter, chocolate chips, whip cream or maple syrup.

  2. I can't believe I'm the first to comment on these....they look & sound amazing! Sadly, my waffle iron broke on me a few months ago, but I'm bookmarking this to try once I get a new one...even if its when pumpkin is out of season ;)

  3. These look really good and with an abundance of pumpkin at the moment any new recipe is great!Only one question what is pumpkin pie spice...maybe nutmeg would work? Yvette

    This sounds delicious. We made pumpkin banana bread this morning and have some puree leftover. Can't wait to try them in the morning.

    You can buy Pumpkin Pie spice at the grocery store in the spice aisle. It is just a combination of cinnamon, nutmeg, ginger & cloves. You can use any combination of these spices in this recipe.

  6. These sound soooo good. Do they freeze well? That would be a perfect way to have them on hand on a whim...instead of having to whip them up fresh every time. Thanks for sharing.

    Yes, these waffles freeze well. I usually make a triple batch and put them in a plastic freezer bag with a piece of wax paper between each waffle to keep them from sticking to each other. I reheat them in the toaster so they are crispy but you can microwave them (they will not be crispy).

  9. I freeze waffles all the time. As I make them, I lay them out on cooling racks to fully cool, then put them in plastic freezer bags. I don't use wax paper and I don't have any trouble pulling a couple out of the bag. Freezing waffles is just about my favorite freezer trick.

    The recipe looks yummy! I'll try these tomorrow!
