Sour Cream Cornbread
- 1/4 cup Butter
- 3 Tablepsoons Sugar
- 2 Eggs
- 1/2 cup Sour Cream
- 1/2 cup Milk
- 1 cup All Purpose Flour
- 2/3 cup Yellow Cornmeal
- 1 1/2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1/4 teaspoon Baking Soda
Cream butter and sugar with an electric mixer until smooth. Add 1 egg at a time and mix with the electric mixer. It is very important to mix for 5 minutes to make the cornbread fluffy and cake-like.
Add milk & sour cream. Stir with a spoon until mixed. Add the rest of the ingredients and mix with a spoon (batter will be lumpy).
Pour batter into a lightly greased 8 inch square baking dish and bake at 425 degrees for 18-22 minutes.
