Blueberry Cheesecake Bars Recipe


Blueberry Cheesecake Bars

This recipe is called Blueberry Cheesecake bars but it is more like cake than a bar but it is super yummy.  This is perfect for breakfast, brunch or dessert!

  • 1/2 cup Butter (can substitute with shortening but not margarine)
  • 3/4 cup Sugar
  • 1 Egg
  • 1/3 cup Milk
  • 1/2 teaspoon Almond Extract
  • 1 cup Flour
  • 1/1/4 teapsoon Baking Powder
  • 1 1/2 cups Fresh Blueberries
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
Cream butter, sugar, egg, milk and almond extract in a large bowl. Mix in flour and baking powder.  Spread evenly in lightly greased, square baking pan.  Top with blueberries and sprinkle with cinnamon & nutmeg.

Topping:
  • 8oz. Cream Cheese
  • 1/3 cup Powdered Sugar
  • 1/2 teapoon Almond Extract
  • 2 Eggs

In a medium bowl, beat the eggs, and cream cheese until smooth. Stir in powdered sugar and almond extract. Spread over blueberries.

Bake at 350 degrees for 55-60 minutes or until completely set.  Cool in the pan before cutting.
