Breakfast in a Muffin Recipe

Breakfast in a Muffin
  • 1 cup All-Purpose Flour
  • 1 cup Whole Wheat Flour
  • 1/4 cup Sugar
  • 4 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Milk
  • 1/4 cup Canola Oil
  • 2 Eggs
  • 8oz. package Cream Cheese (softened)
  • 1/2 cup Shredded Sharp Cheddar Cheese
  • 1/2 teaspoon Seasoned Salt
  • 4 Bacon Strips (cooked & crumbled)

In a large bowl, combine flour, sugar, baking powder & salt. Combine milk, oil and 1 egg and stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full. In a mixing bowl, beat cream cheese and second egg. Add cheddar cheese and seasoned salt; mix well. Stir in bacon. Spoon 2 tablespoons in the center of each muffin. Bake at 425 degrees for 15-20 minutes. Serve warm.

These muffins freeze & reheat well so they are perfect for a quick and easy hot breakfast on the go.

  1. How would you heat these after freezing?

  2. I usually reheat them in the toaster oven or microwave.

  3. Thanks for sharing the recipe. I'm going to give these a try. They sound like good "company" food. Easy to make ahead, easy to serve! Happy MPM! ~~Rhonda
