Pumpkin Waffle Recipe



I absolutely love pumpkin!! My son loves pumpkin too but please don't tell him that pumpkin is a veggie and it is packed with vitamins. I plan on making a large batch of these waffles for the freezer later on this week. I love them because they are delicious and how else can you get a child to eat a full serving of veggies at breakfast and not even know it (Sshhhh don't tell Connor ; ) .



Pumpkin Waffles


  • 1 cup Whole Wheat Flour
  • 1 cup All Purpose Flour
  • 3 Tablespoons Brown Sugar
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Pumpkin Pie Spice
  • 1 1/2 cups Milk
  • 1 cup Pumpkin
  • 1 Egg
  • 2 Tablespoons Canola or Peanut Oil
  • 1 1/2 teaspoons Vanilla
Mix together milk, pumpkin, egg, oil & vanilla in a bowl. Combine flour, brown sugar, baking powder, baking soda, and pumpkin pie spice in another bowl. Stir dry ingredients into pumpkin mixture until well blended. Let the batter rest for 2-3 minutes. Cook on waffle iron according to waffle iron directions. Enjoy plain, with butter, chocolate chips, whip cream or maple syrup.
