Scrambled Eggs Benedict


This recipe takes about 10-15 minutes to prepare and we love it! This is not a traditional Eggs Benedict but a modified version. I use different kinds of meat in this recipe, depending on what I have on hand. Here is what you will need:


  • 5-6 Eggs

  • Bacon (Sliced or cubed Turkey or Ham will also work)

  • English Muffins (store bought or Homemade Recipe here)

  • Hollandaise Sauce (store bought mix or recipe here)

Scramble the eggs in a skillet and cook the bacon in the microwave. Split the English Muffins and toast them. Prepare the Hollandaise Sauce (I prefer to use the Knorr mix and always keep a few in my pantry). Place toasted English Muffins open face on a plate. Top with scrambled eggs, bacon, sauce and Paprika (optional). Serve with sliced tomatoes and fresh fruit.


This also makes a great quick Sunday Brunch/Lunch meal!

  1. Nice recipe. I'm not a big egg eater, but this looks like something my husband would totally love. He'd eat breakfast for 3 meals a day if I let him!
