Taco Soup Recipe

I love Fall! There is something about the chill in the air and the smell of fall that makes me crave soup. One of our favorite soups is Taco Soup. My husband is not a big soup eater because he says soup does not fill him up however he says that Taco Soup is filling. I usually serve it with Cheese Quesadillas and chips & salsa.

Taco Soup

1 lb. ground beef cooked and seasoned with Taco Seasoning (I prefer Homemade Gourmet Taco Seasoning but any will work)

1 can Pinto Beans (drained)

1 can 15oz. Tomato Sauce

1 can Rotel (diced tomatoes & green chilis)

1 can Corn
1 cup water

5 tablespoons Taco Seasoning

Add all ingredients to crockpot and cook on low 4-6 hours. Garnish with crushed tortilla chips, shredded cheese & sour cream.

  2. I made taco soup today! The only thing I did differently was use black beans instead of pintos.
