I absolutely love pumpkin!! My son loves pumpkin too but please don't tell him that pumpkin is a veggie and it is packed with vitamins. I made a large batch of these pumpkin waffles several months ago and we have been enjoying them from the freezer. I love them because they are delicious and how else can you get a child to eat a full serving of veggies at breakfast and not even know it (Sshhhh don't tell Connor ; ) .
Pumpkin Waffles
- 1 cup Whole Wheat Flour
- 1 cup Unbleached All Purpose Flour
- 3 Tablespoons Brown Sugar
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 2 teaspoons Pumpkin Pie Spice (you can add more or less to taste)
- 1 1/2 cups Milk
- 1 cup Pumpkin Puree
- 1 Egg
- 2 Tablespoons Canola Oil
- 1 1/1 teaspoons Vanilla
Mix together milk, pumpkin, egg, oil & vanilla in a bowl. Combine flour, brown sugar, baking powder, baking soda, and pumpkin pie spice in another bowl. Stir dry ingredients into pumpkin mixture until well blended. Let the batter rest for 2-3 minutes. Cook on waffle iron according to waffle iron directions. Enjoy plain, with butter or maple syrup.
