I found this meatball recipe last fall and it has quickly become a family favorite. I love this recipe because the meatballs are very versatile. I have served them as an appetizer in BBQ sauce, with marinara sauce & pasta, in a meatball hashbrown bake and with gravy over mashed potatoes.
Meatball Recipe
- 2lbs. Lean Ground Beef (or ground turkey)
- 1 package Stove Top Stuffing ( I use chicken flavor)
- 1 cup Water
- 2 Eggs
Heat oven to 400 degrees. In a large bowl, mix together all ingredients. Form into 50 (1.5 inch) balls. Place on a foil lined and lightly greased baking sheet. Bake for 16-20 minutes or until no longer pink inside.
To freeze: Place cooked and cooled meatballs on a baking sheet lined with wax or parchment paper. Place in the freezer for 4-6 hours or overnight. Remove meatballs from the baking sheet and place in a freezer bag and store in the freezer.

ReplyDeleteYou can also use this recipe a couple other ways that freeze well. I make it into patties and freeze. Thaw out and cook in a skillet with mushroom soup and mushrooms---making a very yummy Salisbury Steak. You can also press into a bread pan and bake---making meatloaf. You can feeze the meatloaf before or after baking.
