One of our favorite afternoon snacks are homemade muffins. Now that fall is quickly approaching I have started looking at all of my pumpkin recipes. There is nothing like a warm pumpkin muffin with butter on a cool fall afternoon. This is one of our all time favorite muffin recipes.
Pumpkin Butterscotch Muffins
- 1 3/4 cup All Purpose Flour
- 1/2 cup Brown Sugar
- 1/2 cup Sugar
- 1 teaspoons Cinnamon *
- 1/2 teaspoon Ginger
- 1/2 teaspoon Nutmeg
- 1 teaspoon Baking Soda
- 1/4 teaspoon Baking Powder
- 1/2 teaspoon Salt
- 2 Eggs
- 1/2 cup Melted Butter
- 1 teaspoon Vanilla
- 1 cup Pumpkin
- 6 oz. package Butterscotch Chips
* I use 2 teaspoons of Pumpkin Pie Spice instead of the cinnamon, ginger & nutmeg.

I use a recipe similar to this and my daughter LOVES them! Her favorite is when I substitute chocolate chips for the butterscotch. YUM!
