Ultimate Recipe Swap: Pumpkin Butterscotch Muffins



One of our favorite afternoon snacks are homemade muffins.  Now that fall is quickly approaching I have started looking at all of my pumpkin recipes.  There is nothing like a warm pumpkin muffin with butter on a cool fall afternoon.  This is one of our all time favorite muffin recipes.

Pumpkin Butterscotch Muffins

  • 1 3/4 cup All Purpose Flour
  • 1/2 cup Brown Sugar
  • 1/2 cup Sugar
  • 1 teaspoons Cinnamon *
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Nutmeg
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/2 cup Melted Butter
  • 1 teaspoon Vanilla
  • 1 cup Pumpkin
  • 6 oz. package Butterscotch Chips
Preheat the oven to 350 degrees.  Sift together the flour, brown sugar, white sugar, cinnamon, ginger, nutmeg, baking soda, baking powder, and salt into a large bowl. Whisk together the eggs, butter, vanilla and pumpkin in a separate bowl. Mix the flour mixture with the egg mixture. Stir in the butterscotch chips.   Fill muffin cups 2/3 full.  Bake for 20-25 minutes. 

* I use 2 teaspoons of Pumpkin Pie Spice instead of the cinnamon, ginger & nutmeg.

  1. I use a recipe similar to this and my daughter LOVES them! Her favorite is when I substitute chocolate chips for the butterscotch. YUM!
