Zucchini Casserole Recipe



Zucchini Casserole

This recipe is from my Grandmother's recipes and did not include exact measurements but I have tried to estimate each ingredient.  The amounts are for a 9 x 13 baking dish but could easily be cut in half.

  • 1 cup curshed Soda Crackers
  • 2 large Zucchini cut into slices
  • 2 teaspoons Garlic Salt
  • 3-4 Tablespoons Melted Butter
  • Sliced Onions (to taste)
  • Sliced Tomatoes
  • 1 cup shredded Cheddar and/or Jack Cheese
  • 4-6 slices of cooked Bacon (crumbled)
Layer in a 9x13 baking dish in this order:  soda cracker crumbs, zucchini, garlic salt, melted butter, sliced onions, sliced tomatoes, cheese & bacon.  Bake at 350 degrees for 1 hour.
