Muffin Baking Day


We are having a Muffin Baking Day! I love to have a stock of homemade muffins in the freezer for breakfast and snacks. Here is what we are making today:







Butterscotch Pumpkin Muffins (these are super YUMMY!!)




Here are our first 2 batches of muffins.



This is definitely the best part of Baking Day!



Come back on Thursday when we will be making Homemade Laundry Soap.

    Amy, you have inspired me! I bake and freeze muffins too, but I really like your idea to bake a variety and freeze them. I feed 5 children breakfast daily and this would make everyone happy!

  3. I've never done this but you're post is inspiring me to try. How do you prepare these after baking? How do you freeze them and reheat?

  4. After baking, I let the muffins cool and then we have to sample at least one of each flavor (LOL). Then I place what is left in freezer ziploc bags and put them in the freezer. To defrost, I just leave them on the kitchen counter for a couple of hours and then store them in the frig. I usually reheat them in the microwave or toaster oven.
