Pumpkin Spice Granola Bar Recipe

I just made Homemade Granola Bars for the first time. Here is the recipe for Pumpkin Spice Chewy Granola Bars:

2 cups Oats
1 cup Whole Wheat flour
2/3 cup Brown Sugar
1/2 cup Wheat Germ
3/4 teaspoon Salt
1 teaspoon Pumpkin Pie Spice
1/2 cup Honey
2 teaspoons Vanilla
1/2 cup Canned Pumpkin
1/2 cup Canola Oil
1 Egg (beaten)

Preheat the oven to 350 degrees. Mix all of the dry ingredients in a medium size bowl. Next, mix in all of the wet ingredients. Make sure all of the ingredients are thoroughly mixed.

Spread the mixture in a greased 9x9 pan. I prefer using stoneware for this recipe especially if you like chewy granola bars. Pat with a spatula until the mixture is evenly distributed and flat. Bake in the oven for 30-40 minutes or until the edges start to brown.

After you remove from the oven, allow them to cool for 5 minutes then turn the pan upside down and remove in one big piece. This is when the stoneware pan really makes a difference, mine came out so easy! Cut into bars and allow to cool completely. Store in an air tight container. The granola bars should keep for about a week or they can be frozen.

Yummy!!

  4. Keri,
I am not sure of the exact cost. I do a lot of baking and these are all things I keep in my pantry. I always stock-up on canned pumpkin at Thanksgiving & Christmas when it is super cheap. I would guess that the cost is under $1 to make 1 batch of the Granola Bars.
