For my Kansas City readers, this recipe is from the Stephenson's Restaurant cookbook.
Stephenson's Apple Farm Cake
- 1/4 cup Shortening
- 1 cup Sugar
- 1 Egg
- 4 cups Chopped Apples (about 4 medium apples)
- 1 cup Flour
- 1 teaspoon Baking Soda
- 1/8 teaspoon Salt
- 1 teaspoon Cinnamon
- 1/2 teaspoon Nutmeg
- 1/4 teaspoon Ground Cloves
Cream shortening and sugar. Mix in egg and then apples. Sift together the rest of the ingredients and add to apple mixture. Mix until wet (batter is thick). Spread in a greased 9-inch square baking pan. Bake at 325 degrees for about 45 minutes or until toothpick inserted in center comes out clean. While warm, cut into squares. Sprinkle with powdered sugar. Makes 16 squares.

ReplyDeleteThis cake sounds yummy. Think I might have had it the resaurant. We ate there a couple of times and the next time we went there it was closed :( I bet that cookbook has lots of good recipes. Their food was awesome!
