Stephenson's Restaurant Dinner at Home


One of my very favorite Kansas City restaurants was Stephenson's.  I still have their cookbook and one of my favorite meals to make for company is Stephenson's Baked Butter & Cream Chicken with Green Rice and of course Apple Fritters! 


Stephenson's Baked Butter & Cream Chicken
  • 1/2 cup Flour
  • 1 1/2 teaspoons Salt
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Pepper
  • 1/2 cup Dry Milk Powder
  • 1 lb. Chicken Breasts or Tenders
  • 1/4 Butter (do not substitute margarine)
  • 1 1/2 cups Hot Water
Dip Chicken Breasts into water. Coat with mixture of flour & seasonings. Lightly grease a 13x9x2 Baking Dish. Place Chicken Breasts into the pan. Dot with butter. Bake at 425 degrees for 30 minutes or until golden brown. Remove from oven. Combine dry milk powder & hot water in a bowl. Pour milk around chicken. Cover with aluminum foil and return to the oven. Bake at 350 degrees for 45 minutes.



Stephenson's Green Rice
(makes 10 servings)
  • 3 cups Cooked Rice
  • 1 cup chopped Parsley
  • 1/2 cup Grated Cheddar Cheese
  • 1/3 cup chopped Onion
  • 1/4 cup chopped Green Pepper
  • 1 clove minced Garlic
  • 14.5oz. can Evaporated Milk
  • 2 eggs (beaten)
  • 1/2 cup Vegetable Oil
  • 1 Tablespoon Salt
  • 1/2 teaspoon Seasoned Salt
  • 1/2 teaspoon Pepper
  • Juice & Grated Rind of 1 Lemon
Mix rice, parsley, cheese, onion, green pepper & garlic in greased 2-quart casserole.  Mix together the rest of the ingredients and mix into the rice.  Sprinkle with paprika.  Bake at 350 degrees for 45 minutes or until like a soft custard.

  • 1 Orange, rind & juice
  • 1 cup Apples (chopped fine)
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Vanilla
In a mixing bowl combine the milk, egg and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on) and vanilla. Sift together the flour, salt, baking powder. Stir into milk mixture with a spoon until blended. Do not overmix. Preheat oil in a skillet to 350 degrees. Drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown even. Allow to cool. Roll in powdered sugar.

Stephenson's Apple Fritters
(makes 40 fritters)

  • 1 cup Milk
  • 1 Egg (beaten)
  • 4 tablespoons Margarine
  • 1/2 cup Sugar
  • 1/2 teaspoon Salt
  • 1 Orange, rind & juice
  • 1 cup Apples (chopped fine)
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Vanilla

Stephenson's Apple Farm Cake Recipe

For my Kansas City readers, this recipe is from the Stephenson's Restaurant cookbook.

Stephenson's Apple Farm Cake

  • 1/4 cup Shortening
  • 1 cup Sugar
  • 1 Egg
  • 4 cups Chopped Apples (about 4 medium apples)
  • 1 cup Flour
  • 1 teaspoon Baking Soda
  • 1/8 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Ground Cloves
Cream shortening and sugar. Mix in egg and then apples. Sift together the rest of the ingredients and add to apple mixture. Mix until wet (batter is thick). Spread in a greased 9-inch square baking pan. Bake at 325 degrees for about 45 minutes or until toothpick inserted in center comes out clean. While warm, cut into squares. Sprinkle with powdered sugar. Makes 16 squares.
