Pumpkin Cheesecake Muffins
(Makes 3 Dozen Muffins)
- 1 box Yellow Cake Mix (and the ingredients to prepare the cake mix)
- 2 teaspoons Cinnamon
- 1/2 teaspoon Ground Cloves
- 2 teaspoons Nutmeg
- 1 package Vanilla Instant Pudding (dry)
- 1 cup Pumpkin
- 1 package Cream Cheese (softened)
- 1/4 cup Sugar
- 1 Egg
Preheat oven to 350 degrees. Prepare cake mix according to package instructions. Add the vanilla pudding mix (dry)cinnamon, ground cloves, nutmeg & pumpkin and mix until well blended. Spoon into paper lined muffin cups filling 2/3 of the way full.
Beat cream cheese with a mixer until creamy. Blend in the sugar & egg. Spoon over batter.
Bake at 350 degrees for 18-22 minutes or until toothpick inserted in centers comes out clean. Cool 5 minutes and then remove to wire racks to cool completely.
