If you have lived in Kansas City for a while you probably know of Stephenson's Restaurant. It was one of my favorite Kanas City Restaurants for many years and I was very sad when it closed. I was sorting some of my cookbooks when I ran across my Stephenson's Restaurant Cook Book! I have not used this in years and I had even forgotten that I had it. I am going to share one of my favorite Stephenson's Restaurant Dishes with you this week. The original recipe calls for 1 cut-up frying chicken. I substitute Chicken Breasts.
Stephenson's Baked Chicken & Butter Cream
1/2 cup Flour
1 1/2 teaspoons Salt
1/2 teaspoon Paprika
1/4 teaspoon Pepper
1/2 cup Dry Milk Powder
1 lb. Chicken Breasts (or you can use 1 cut-up frying chicken)
1/4 cup Butter (do not substitute margarine)
1 1/2 cups Water
Dip Chicken Breasts into water. Coat with mixture of flour & seasonings. Lightly grease a 13x9x2 Baking Dish. Place Chicken Breasts into the pan. Dot with butter. Bake at 425 degrees for 30 minutes or until golden brown. Remove from oven. Combine dry milk powder & hot water in a bowl. Pour milk around chicken. Cover with aluminum foil and return to the oven. Bake at 350 degrees for 45 minutes.
Tonight I served the Butter & Cream Chicken with Mashed Potatoes & Green Bean Casserole. Next time I think I will make Stephenson's Green Rice.Dip Chicken Breasts into water. ReplyDeleteI used to have this cookbook, too. For whatever reason, years ago I tore out a couple of recipes and tossed the book. I wish now that I hadn't, but I guess I was in a purging mood then. Glad you're sharing the recipes!!

As luck would have it----I did win the auction today. Cannot wait to get it and have more yummy recipes like you have shared.
ReplyDeleteI just made this for dinner ... I used boneless skinless chicken thighs and a can of evaporated milk because that is what I had on hand. Otherwise, I followed the recipe. This is as advertised ... easy and amazingly delicious. I did everything short of licking the plate. Serious yums yums!
