Grasshopper Pie Recipe

Grasshopper Pie

Crust:
  • 16 finely crushed Oreo Cookies
  • 1/2 stick of Butter

Filling:
  • 3/4 cup Sugar
  • 3 Tablespoons Cornstarch
  • 1 3/4 cup Milk
  • 1/4 teaspoon salt
  • 3 Egg Yolks
  • 1/2 teaspoon Mint Extract
  • Green Food Coloring
  • 1 cup Whipping Cream



To make the crust: Melt the butter and combine with the finely crushed oreos. Gently pat into a pie dish. Bake for 8 minutes at 375 degrees.
To make the filling: In a heavy sauce pan, combine the sugar cornstarch and salt. Stir in 1 1/4 cups milk and cook over medium heat stirring constantly until the mixture thickens and comes to a boil. Boil for 1 minute and then remove from heat. In a small bowl, beat together egg yolks and 1/2 cup milk. Slowly stir this into the hot custard. Return to heat and cook 2 minutes stirring constantly.


Remove from heat and add 1/2 teaspoon of mint extract and a few drops of green food coloring. Cover the custard with a lid or plastic wrap. Add cold water to a large bowl or sink and place the pan with the custard in the cold water to cool (do not let it cool too long or it will be lumpy).


In a bowl beat the whipping cream until fluffy.
 

Fold the whipped cream into the cooled custard mixture.
 

Pour the custard into the pie crust and chill for 2-4 hours.
 
 
Top the pie with whip cream and decorate with sprinkles or add crumbled cookies to the top.

Country Inn Cinnamon Bread Recipe

 
Country Inn Cinnamon Bread


Ingredients:
  • 2 cups All-Purpose Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Ground Cloves
  • 3/4 cup Granulated Sugar
  • 1/4 Brown Sugar
  • 2 Eggs (beaten)
  • 2 teaspoons Vanilla
  • 1/3 cup Canola Oil
  • 1 cup Buttermilk (go here for substitution)

Topping:

  • 2 Tablespoons Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Butter (in pieces)
  • Dash of Nutmeg

Pre-heat oven to 350 degrees. Combine first five ingredients in a bowl. Set aside. In a second larger bowl combine remaining ingredients in order given. Gradually stir dry mixture into liquid mixture. Pour batter into a greased loaf pan. Sprinkle topping over loaf. Bake at 350 degrees for 45-50 minutes. Serve hot with butter.

Thanksgiving Leftovers Pizza Recipe


Are you already looking for recipe ideas for Thanksgiving leftovers?  This is our family's very favorite way to eat Thanksgiving leftovers & it is easy to make!
 
Thanksgiving Leftovers Pizza
 
  • Pizza Crust (I use the recipe here.)
  • Leftover Turkey
  • Leftover Gravy
  • Leftover Stuffing
  • 1/2 cup Mozzarella Cheese (or the cheese of your choice)
Spread the gravy on top of the pizza crust for the sauce. Add leftover turkey and sprinkle with cheese. Top with stuffing and bake at 425 degrees for 15-20 minutes. Serve with leftover green bean casserole and leftover pumpkin pie. YUM!!

Crockpot Spiced Cranberry Turkey Recipe


This is a great recipe for those Thanksgiving leftovers!  It can also be prepared as a Freezer Meal for later.


Crockpot Spiced Cranberry Turkey

 
Ingredients:
  • 1lb. Turkey (Leftover Thanksgiving Turkey, Breast Cutlets or Turkey Tenderloin)
  • 1 can Whole Cranberry Sauce
  • 1/4 cup Honey
  • 2 teaspoons Cinnamon
  • 1 teaspoon All Spice
  • 1 cup Water

Combine all of the ingredients in the crockpot and cook on low for 4-6 hours (shorten the cooking time to 2-3 hours if using cooked leftover turkey). Serve with Stuffing and Green Bean Casserole for the taste of Thanksgiving/Christmas minus all of the work!




This recipe can be even simpler by making it a Freezer Meal. Place all the ingredients in a Ziploc Freezer bag and lay flat in the freezer. When you are ready to use this meal take it out of the freezer and place in the sink. Run warm water on the bag until you can break it into a couple of pieces to fit in the crockpot. Cook on low 6-8 hours.

Easy Crockpot Swedish Meatballs Recipe




Easy Crockpot Swedish Meatballs


  • Meatballs (I make them ahead of time and freeze them but you could also use store bought frozen meatballs.)
  • 1 can Cream of Mushroom Soup
  • 1 soup can of Water
  • 1 packet Dry Onion Soup Mix


Add the Cream of Mushroom Soup, Water & Dry Onion Soup Mix to the crockpot and stir. Add in the meatballs and cook on low 3-4 hours. Serve over Egg Noodles or Rice

Breakfast in a Muffin Recipe


Breakfast in a Muffin
 

Ingredients:
  • 1 cup All-Purpose Flour
  • 1 cup Whole Wheat Flour
  • 1/4 cup Sugar
  • 4 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Milk
  • 1/4 cup Canola Oil
  • 2 Eggs
  • 8oz. package Cream Cheese (softened)
  • 1/2 cup Shredded Sharp Cheddar Cheese
  • 1/2 teaspoon Seasoned Salt
  • 4 Bacon Strips (cooked & crumbled)

In a large bowl, combine flour, sugar, baking powder & salt. Combine milk, oil and 1 egg and stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full. In a mixing bowl, beat cream cheese and second egg. Add cheddar cheese and seasoned salt; mix well. Stir in bacon. Spoon 2 tablespoons in the center of each muffin. Bake at 425 degrees for 15-20 minutes. Serve warm.

These muffins freeze & reheat well so they are perfect for a quick and easy hot breakfast on the go.

Baked Mozzarella Sticks Recipe


I found this recipe on Pinterest and knew immediately that I had to try it!  Last night Connor & I made Baked Mozzarella Sticks and they were amazing!  The original recipe refers to them as healthy.  I don't think I would call these healthy but they are definitely a low calorie option to the fried restaurant or frozen versions.  Connor & I calculated that they are approximately 45 calories each and that includes the marinara sauce for dipping (calories may vary depending on the type, brand & amount of ingredients used).

Baked Mozzarella Sticks

Ingredients:
  • 12 Sticks of String Cheese
  • 1 Egg
  • 1/4 cup Flour
  • 1/2 cup Bread Crumbs
  • 1/4 cup Parmesan Cheese
  • Cooking Spray

First, cut the cheese sticks in half and then place them in the freezer until they are frozen solid (4-6 hours).  I made the mistake of freezing them first and then trying to cut them.  It would have been a lot easier if I cut them first.


Next, I set out 2 plates, 1 bowl and I covered a baking sheet with aluminum foil which I sprayed with cooking spray (this was for easy clean-up).  I put the frozen cheese sticks first, then a plate with flour, the bowl with the egg (lightly beaten) and finally the second plate with the bread crumbs & parmesan cheese mixed together.

Roll each cheese stick in the flour, then the egg and finally the bread crumb mixture and place them on the baking sheet.


Bake them in a 400 degree oven for 4 minutes then gently turn them over and bake for another 4-5 minutes.  Watch them very closely in the oven.  You do not want the cheese to ooze out and baking times can vary with different ovens.

Chocolate Peanut Butter Ball Monsters


Chocolate Peanut Butter Ball Monsters

Ingredients:
  • 2 cups Creamy Peanut Butter
  • 1/2 cup Butter (softened)
  • 3 3/4 cups Powdered Sugar
  • 3 cups Rice Crispies
  • 4 cups Semi-Sweet Chocolate Chips
  • 1/4 cup Shortening

In a large bowl, beat peanut butter and butter until blended. Slowly beat in the powdered sugar. Stir in the Rice Krispies. Shape into 1 inch balls and refrigerate for 2-4 hours.
 

Melt chocolate chips and shortening in the microwave, in a double boiler on the stove or in a Wilton chocolate Pro Electric Melting Pot. Stir until smooth & creamy. Use a toothpick and dip the peanut butter balls in the chocolate and place on a wax paper lined baking sheet. Place 2 Candy Eyeballs on each chocolate peanut butter ball. Chill until set.

Pumpkin Chocolate Chip Cookie Recipe


Pumpkin Chocolate Chip Cookies
(makes 2 dozen cookies)


Ingredients:
  • 1 cup Pumpkin
  • 1 cup Sugar
  • 1/2 cup Oil (I prefer canola or peanut oil.)
  • 1 Egg
  • 2 cups Flour
  • 2 teapoons Baking Powder
  • 2 teaspoons Cinnamon
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Milk
  • 1 Tablespoon Vanilla
  • 2 cups Semi-Sweet Chocolate Chips
  • 1/2 cup chopped Walnuts (optional)

Mix together in a large bowl pumpkin, sugar, oil, vanilla and egg. In another bowl mix together flour, baking powder, ground cinnamon and salt. In a small bowl, mix together baking soda and milk and then add to the pumpkin mixture. Slowly add the flour mixture to the pumpkin mixture. Add the chocolate chips and walnuts. Drop spoonfuls of dough on a greased cookie sheet and bake at 350 degrees for 10 minutes.

Frankenstein Monster Brownies


Frankenstein Monster Brownies


You will need:
  • 1 Brownie Mix & the ingredients listed on the box
  • Muffin Pan
  • Large Marshmallow
  • Green Candy Melts
  • Candy Eyeballs
  • Purple & Black Tubes of Decorator Frosting



First, mix the brownie batter as directed on the box and bake them in a muffin pan.  Watch them carefully because they will bake in about 12-15 minutes. 


Once the brownies are done remove them from the muffin pan and let them cool completely.



Melt the green candy melts  in a Wilton Chocolate Pro, small crockpot, double boiler or microwave.



Spread a small amount of the melted green candy melts on top of a brownie. This will act like glue to keep the Frankenstein head from falling off.


Next, dip a large marshmallow in the melted green candy melts and cover it completely.  I used a spoon for dipping and to spread the candy melts for better coverage.


Now place the marshmallow on top of the brownie and immediately add the candy eyes.  Repeat until all of the brownies have a Frankenstein head.


Once the candy melts have completely set (approx. 1-2 hours), decorate the Frankenstein heads with hair & a mouth.  I used a tube of purple decorator icing with a  Wilton Grass Tip (#233) for the hair & a Wilton Round Tip (#5)  for the mouth.  You can get creative & use different colors and/or designs!




The Frankenstein heads also make great Frankenstein Monster Pops!

Mexican Spaghetti Casserole Recipe



This recipe is so easy and delicious! The ingredients are basic which makes it a great last minute meal. This recipe can easily be modified to your families tastes & can be made mild or spicy.

Mexican Spaghetti Casserole

Ingredients:
  • 1 can Cream of Mushroom (or Cream or Chicken) Soup
  • 16oz. Velveeta Cheese
  • 1/4 cup Milk
  • 1 can Diced Tomatoes with Green Chiles
  • 1lb. Chicken Breasts or Tenders
  • 1 can Sliced Black Olives (optional)
  • 1 package Spaghetti

1.  Cook Chicken in a skillet until it starts to brown and is no longer pink inside. I like to season it with Taco Seasoning. Dice or shred the cooked chicken.

2.  Prepare Spaghetti according to package directions.

3.  Cut Velveeta Cheese into cubes.

4.  Combine Cream of Mushroom Soup, Velveeta Cheese, milk and Rotel in a bowl. Add cooked chicken and cooked Spaghetti to the mixture.


5.  Place in a lightly greased 11x13 Baking Dish and top with Black Olives (optional).


6.  Bake at 350 degrees for 25-30 minutes or until cheese is completely melted.

Crockpot Taco Roast Recipe

It's HOT here in Kansas City today so I thought it would be a perfect day to share a crockpot recipe!


Taco Roast


This recipe is super easy and does not require the oven! The meat is perfect for tacos, fajitas or serve with Mexican Rice.

  • 1 small Roast
  • 1 packet Taco Seasoning
  • 1 (15oz.) can Tomato Sauce


Place all ingredients in the crockpot and cook on low for 4-6 hours.


To prepare as a Freezer Meal:

Place all the ingredients in a Freezer bag and lay flat in the freezer. When you are ready to use this meal take it out of the freezer and place in the sink. Run warm water on the bag until you can break it into a couple of pieces to fit in the crockpot. Cook on low 6-8 hours.

Bears on the Beach Pudding Cups


This is a fun & easy recipe that kids love to make (and eat)! Bears on the Beach are a fun summer activity or fun for a party.
Bears on the Beach Pudding Cups

  • Vanilla Pudding Mix
  • Milk
  • Vanilla Wafers
  • Teddy Grahams (or Gummy Bears)
  • Swedish Fish (or Gummy Fish)
  • Blue Sprinkles or Blue Sugar
  • Cocktail Umbrellas

Mix pudding according to package directions & spoon pudding into cups. Crush vanilla wafers and sprinkle a spoonful on one side in each cup to look like sand. Sprinkle blue sprinkles or sugar on the other side of the cup to look like water.  Add bears & umbrella to the sand and  fish to the water. Enjoy!

Homemade Chocolate Ice Cream Recipe


Homemade Chocolate Ice Cream
  • 3/4 cup Sugar
  • 1 cup Whole Milk
  • 2 cups Heavy Cream
  • 2 Tablespoons Unsweetened Cocoa Powder
  • 1/4 teaspoon Salt
  • 3 Egg Yolks (lightly beaten)
  • 2oz. Semi-Sweet Chocolate (squares or chips)
  • 1 teaspoon Vanilla



1. Combine sugar, milk, salt, and cocoa powder in a saucepan over medium heat, stirring constantly. Bring to a simmer.



2. Place the egg yolks into a small bowl. Gradually stir in about 1/2 cup of the hot liquid. and return to the saucepan. Heat until thickened, but do not boil.


3. Remove from the heat, and stir in the chopped chocolate until chocolate is melted. Pour into a chilled bowl, and refrigerate for about two hours until cold, stirring occasionally.


4. When chocolate mixture has completely cooled, stir in the cream, and vanilla. Pour into an ice cream maker, and freeze according to manufacturer's directions.

How to Make Perfect Hard Boiled Eggs & Deviled Eggs Recipe

I have been making eggs with this method for several years now and they always come out perfect, never rubbery or with that gray color yolk.

Basic Hard-Boiled Eggs

  1. Place the eggs in a single layer in a sauce pan. Add cold water to cover the eggs by 1 inch.Heat over high heat until boiling for 2 minutes.
  2. Remove the pan from heat and cover. Let the eggs sit for 15 minutes.
  3. Drain and place the eggs in a cold water bath and chill in the refrigerator.
  4. Decorate for Easter!


Deviled Eggs

  • 8 Large Hard-Boiled Eggs
  • 1/2 cup Mayonnaise
  • 2 Teaspoons Yellow Mustard
  • 1/4 cup Pickle Relish (Sweet or Dill)
  • 1 Tablespoon Onion Powder
  • Salt & Pepper to Taste
  • Paprika
Cut the hard-boiled eggs in half and place the yolks in a bowl. Use a fork to mash the yolks and mix in mayo, mustard, onion powder, relish, salt & pepper until smooth. Spoon the mixture back into the eggs and sprinkle with paprika.

    Buttermilk Pie Recipe


    My son Connor has loved Buttermilk Pie since he was little.  He calls it sugar pie.  This is a simple dessert made from ingredients you probably already have in your pantry. 

    Buttermilk Pie
    • 1/2 cup Butter
    • 1 1/2 cups Sugar
    • 3 Tablespoons Flour
    • 3 eggs (lightly beaten)
    • 1 cup Buttermilk (See substitute here if you do not have buttermilk.)
    • 1 teaspoon Vanilla Extract
    • 1 teaspoon Almond Extract (optional)
    • 1/4 teaspoon Ground Nutmeg
    • 9" Unbaked Pie Crust
    Cream together butter & sugar.  Slowly add eggs, buttermilk, flour, vanilla extract, almond extract (optional) & nutmeg.  Pour into unbaked pie shell.  Bake at 350 degrees for 1 hour.  Allow the pie to cool completely before cutting.  Serve with whip cream.

      Kansas City Crockpot Beanie Weenies Recipe


      Kansas City Crockpot Beanie Weenies

      • 1lb. Ground Beef
      • 1 package Cocktail Smokies
      • 2 (16oz.) cans Pork & Beans
      • 1/4 cup Ketchup
      • 2 teaspoons Yellow Mustard
      • 1 Tablespoon Worcestershire Sauce
      • 3-4 Tablespoons Dry Barbecue Seasoning
      • 2 Tablespoons Brown Sugar

      Add the pork & beans, ketchup, mustard, worcestershire sauce, dry barbecue seasoning & brown sugar to the crockpot.  Cook the ground beef in a skillet.  Add the cooked ground beef to the crockpot and stir.  Cook on low for 3-4 hours.  Add the cocktail smokies and cook on low another 1-2 hours.  Serve with cornbread.
