Freezer Cooking/Baking Day Update

I accomplished a lot on my Freezer Cooking/Baking Day List this weekend!  I made a loaf of Whole Wheat Sandwich Bread, 3 batches of Meatballs (1 pictured above), 1 loaf of Tomato Basil Bread, 4 jars of Blueberry Jam and 2 freezer bags of Waffles. I also portioned out some of the 20lbs. of ground beef I purchased.  I have 4 bags of cooked ground beef 1lb. each and 4 bags of raw ground beef 1lb. each in the freezer.

Here is what I hope to make today:
I plan on finishing my list tomorrow.

Blueberry Jam in the Bread Machine

I love my bread machine!!  I use it all the time but I did not realize until recently that it has a jam cycle.  So today I am trying out the jam cycle and making blueberry jam in my bread machine.

The recipe is very simple:

Blueberry Jam in the Bread Machine

  • 5 cups Fresh Blueberries
  • 2 1/2 cups Sugar
  • 1 package Fruit Pectin
Wash and dry the blueberries.  Mash the blueberries in a bowl or a food processor.  Mix blueberries, sugar & pectin.  Pour the mixture in the bread machine pan and start "jam" cycle.

Once it is done I will can the jam in a Hot Water Bath Canner.

As usual, my list is HUGE!  We will see how much I get done this weekend and then I can finish up on Monday and Tuesday.
