Freezer Cooking/Baking Day this Weekend!

It seems that we have a break with the heat in Kansas City so I am going to take advantage of that and have a Freezer Cooking/Baking Day this weekend.  I am really excited to have this baking day so I can use my new bread machine & my Kitchen Aid mixer!  I will post updates over the weekend.

Here is what I hope to accomplish:

This weekend is Freezer Cooking/Baking Day day.  The past 2 months my Baking Days have been major flops but this time I am ready!!  I have all my ingredients and I have defrosted meat and I am ready to go.  I also have my son, Chef Connor, and he will be assisting.  I have a very long list so we will start today and finish up over the weekend.  Here is our list.

Meat for the Freezer:
Breakfast Foods:
Breads & Desserts:

I am already off to a good start!  I finished making 3lbs. of Meatballs this morning and the turkey is in the roaster oven.  I am off to start a dough cycle in the bread machine for a loaf of Tomato Basil Bread.

I will post Baking Day Updates this weekend and the final results on Monday.

Freezer Cooking/Baking Day 11/6

Last month I had BIG plans for a Baking Day to fill my freezer.  Unfortunately, it did not happen so I am going to try to make-up for it this weekend.  My freezer is very empty so hopefully I will be able to complete my list this weekend.  Here is what I will be making:

Freezer Cooking/Baking Day 10/15

My freezer is running low and so it is time for another Freezer Cooking/Baking Day.  I purchased 6lbs. of apples on sale at Sunfresh so I will be using those and also since it is Fall I will be making several pumpkin recipes.  I like to have breakfast options in the freezer so we can have a hot breakfast without a big mess in the morning so I will be restocking my freezer with some of our breakfast favorites.  I will also be making some of our favorite bread recipes.  Here is my list:

I will start my list today and do some baking this weekend.  I will then finish up on Monday & Tuesday next week.

Freezer Cooking/Baking Day Update

I did not get any of the baking done on Sunday that I had planned.  We are still adjusting to our fall homeschool schedule and so I spent a big part of Sunday afternoon planning for the week.  I also helped stock and organize the Food Crisis Pantry at church.  I planned on finishing my list today but I was only able to bake a loaf of Whole Wheat Sandwich Bread.  Wednesdays are very busy days at our house.  We have homeschool in the morning, Cub Scouts in the afternoon, church small group dinner and Awanas in the evening.  I have decided to be realistic and move the rest of my baking  to Thursday.

Here is what I plan to make on Thursday:
Check back on Thursday and hopefully I will have my list complete and post pictures!

Freezer Cooking/Baking Day Another Update 9/11

Here are the results from my Baking Day Weekend so far:

I made Chocolate Butterhorns, Butterscotch Butterhorns & Chocolate Butterscotch Butterhorns.  YUM!!!

Freezer Cooking/Baking Day Update 9/11

Do you like the picture of my messy kitchen?  This is to prove that I really have Baking Days.  I am off to a slow start this time.  I made 2 batches of Pumpkin Butterscotch Muffins, a loaf of Buttermilk Cheese Bread and the dough for the Chocolate Butterhorns is in the bread machine right now.

After I started, I realized that I do not have any bacon for the Bacon, Egg & Cheese Biscuit Cups but I have 12 (Oh yes, 12.  That is not a typo!) packages of sausage in the freezer so I think I will try them with sausage.

Sunday I am going to make Whole Wheat Sandwich Bread, Buttermilk Biscuits, Pumpkin Bread & Breakfast Cookies.  I will finish the list on Monday afternoon.

My husband took Connor to the park this evening and when they came back the Pumpkin Butterscotch Muffins were in the oven.  Connor came running into the kitchen and said "I want some!!"  I asked him what he wanted and he said "Whatever is making that smell!!"

Freezer Cooking/Baking Day 9/11

It is time for another Freezer Cooking/Baking Day!  I am looking forward to this one since the weather is starting to cool-down a bit here in Kansas City.  The August Baking Day was more difficult because of the hot weather!  Here is my list for the weekend:

Wow!!  As usual, that is a long list.  Check back this weekend to see my progress and I will post the final results of my Baking Day on Monday.

Freezer Cooking/Baking Day Update

I had big plans this weekend to complete my Freezer Cooking/Baking Day List last weekend but I was not able to complete any of my list over the weekend.  I have been working this afternoon and I have accomplished some of my list.  I plan on continuing to work this evening and hopefully my kitchen will be a little bit cooler!  Baking Days are much more enjoyable in the winter!  This week I am going to start searching thrift stores and garage sales for a second bread machine.  I think Baking Days would go faster if I was able to have 2 batches of dough mixing at the same time.

Here is what I have been making in my kitchen today:

Freezer Cooking/Baking Day Update

I spent a little time baking this weekend.  Unfortunately, it wasn't as much time as I had hoped.  I did get a few things crossed off my HUGE list.  I have some time Monday morning so I can try to get a few more things in the freezer.  Here is what I completed this weekend:

I didn't bake the cookies, I formed the dough into balls and put them on a baking sheet covered with wax paper. Then I put them in the freezer overnight. This morning I put them in a ziploc bag in the freezer. This way, we just bake as many cookies as we want at at time and they are always hot & fresh from the oven.

Freezer Cooking/Baking Week at Our House!

This week Connor and I will be having a Freezer Cooking/Baking Day.  I will be incorporating this into our Home Schooling Activities.  I have checked-out several kid's cookbooks from the library and Connor will be planning all of our baking (with a little help & encouragement from Mom of course).  Connor will be learning kitchen life skills, how to read a recipe, basic measurements & fractions and even some of the science involved in baking.  We are both excited about this week!  On Tuesday we will post our list and we will share recipes and our progress Wednesday 4/28 - Friday 4/30.  Come join us for some baking and learning fun!

Freezer Cooking Day Update

I just finished making the chocolate chip cookie dough.  My favorite recipe is the Nestle Tollhouse recipe.  I have tried others (the recipe here is ok) but I always go back to the Nestle recipe.  I also made the dough for the molasses cookies and it is chilling in the refrigerator.  I will bake them later tonight.

When I make chocolate chip cookie dough, I make the dough into balls and place them close together on a cookie sheet covered with wax paper.  I then put the cookie sheet in the freezer for 4-6 hours or until the balls are frozen.  Then I put them in a freezer bag and label it with baking directions.  This way we can bake 3 or 4 cookies at a time and always have fresh, hot from the oven cookies.

Freezer Cooking Day Update

I made a little progress on my Freezer Cooking Day list yesterday.  I was able to bake a loaf of Whole Wheat Sandwich bread and I made a dozen whole wheat hamburger/hot dog buns (6 of each).  The buns weren't on my original list but I decided to change my menu plan last night and I made one of our favorite dinners, hot dogs and  rice cooker macaroni & cheese.

I was also able to prepare 2 Freezer Meals with the pork I bought on sale at Price Chopper for $.97/lb. I added 2lbs. of pork for BBQ meat and 2 cups of BBQ sauce to a freezer bag.  Close the bag and label Rootbeer Pork BBQ.  Place in the freezer.  When I am ready to prepare it I place the frozen contents of the bag in my crockpot, add 1 can of rootbeer and cook on low for 6-8 hours.  Serve on buns or hoagie rolls.

Tonight I am going to make the Chocolate Chip Cookie dough and  Molasses Cookies.  I will also assemble the Hashbrown Potato Casserole for Easter lunch and keep it in the refrigerator until Sunday.  Then I can just pop it in the oven for Easter Lunch.

I think I will save the English Muffins and Pancakes for Monday.
