Freezer Cooking Day Update 3/1


Well, I did not get as much done today as I would have liked but I did cross a few things off my list. Hopefully, tomorrow I will be able to finish my list. I made the Blueberry Oatmeal Muffins and the Chocolate Chip Banana Bread. I also ended up making some Fococcia Bread to go with our Crockpot Lasagna tonight.

Freezer Cooking Day Update 3/1


I was able to cook & freeze 4lbs. of chicken this morning and I baked a loaf of Whole Wheat Sandwich bread yesterday. I am going to adjust my original list because I forgot to purchase ground round this weekend at Price Chopper. I didn't realize that special was on the 4 day sale that ended Sunday so I will save the cooked ground beef and meatballs for another day! I am also making a few other adjustments to the list. Here is my revised list that I will be making today:


I am also trying a new recipe for dinner tonight: Crockpot Lasagna. I made a few modifications to the recipe and if it turns out well I will post the recipe and pictures. If there are not any more posts about Crockpot Lasagna then it was a flop!

Homemade Whole Wheat Sandwich Bread


This is one of the best bread recipes I have found. Go here to see the original recipe and here for a modified version. Here is my version of this recipe:

Whole Wheat Sandwich Bread



  • 1/2 cup warm milk (70-80 degrees)

  • 1/2 cup warm water (70-80 degrees)

  • 1 egg

  • 3 tablespoons honey

  • 2 tablespoons butter softened

  • 1 1/2 teaspoons salt

  • 1 cup All Purpose Flour

  • 2 cups Whole Wheat Flour

  • 1/4 cup Wheat Gluten (available at the grocery store in the baking aisle)

  • 2 1/4 heaping teaspoons active dry yeast (I prefer bread machine or rapid rise yeast)

Add all ingredients to your bread machine according to the manufacturer's directions and set on dough cycle.


When dough cycle is complete, place bread dough in a lightly greased loaf pan. Cover and let it rise for 1-2 hours or until doubled in size.


Bake bread at 350 degrees for 30-35 minutes. Remove from oven and let it cool for 10 minutes. Remove bread from loaf pan and let it cool completely before storing.

Freezer Cooking Day 3/1/10


I can't believe that February is almost over (especially since my basement organization project is only 1/3 complete - YIKES)! My freezer stock of meals and baked goods is running very low so it is time for another Freezer Cooking Day. Here is my plan for next week:
