Country Inn Cinnamon Bread Recipe

 
Country Inn Cinnamon Bread


Ingredients:
  • 2 cups All-Purpose Flour
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Ground Cloves
  • 3/4 cup Granulated Sugar
  • 1/4 Brown Sugar
  • 2 Eggs (beaten)
  • 2 teaspoons Vanilla
  • 1/3 cup Canola Oil
  • 1 cup Buttermilk (go here for substitution)

Topping:

  • 2 Tablespoons Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Butter (in pieces)
  • Dash of Nutmeg

Pre-heat oven to 350 degrees. Combine first five ingredients in a bowl. Set aside. In a second larger bowl combine remaining ingredients in order given. Gradually stir dry mixture into liquid mixture. Pour batter into a greased loaf pan. Sprinkle topping over loaf. Bake at 350 degrees for 45-50 minutes. Serve hot with butter.

Pumpkin Bread Recipe


Pumpkin Bread


  • 1 cup canned Pumpkin
  • 1 cup Sugar
  • 1 teaspoon Vanilla
  • 1/3 cup Water
  • 1/2 cup Canola or Peanut Oil
  • 2 Eggs
  • 1 3/4 cup All Purpose Flour
  • 3/4 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Pumpkin Pie Spice
  • 1/4 teaspoon Nutmeg
In a large bowl blend together all the ingredients in the order listed. Mix until smooth. Pour batter into a lightly greased loaf pan and bake at 350 degrees for 1 hour. Cool for 10-15 minutes before removing from the pan.

Sometimes, when I need extra calories (HaHa), I add 1 cup of semi-sweet chocolate chips. Yum!

Buttermilk Cheese Bread

  • 1 1/8 cup Buttermilk (if you don't have buttermilk, see substitution here)
  • 3 cups Flour (I use 2 cups All Purpose & 1 cup Whole Wheat)
  • 2 tablespoons *Wheat Gluten (in the baking aisle at the grocery store)
  • 1 1/2 teaspoons Salt
  • 1 1/2 teaspoons Sugar
  • 1 cup Shredded Sharp Cheddar Cheese
  • 1 1/2 teaspoons Yeast

Place all ingredients in Bread Machine according to the manufacturer's directions and set on dough cycle. When cycle is complete, place dough in a lightly greased loaf pan. Cover and let it rise for 1 hour. Bake in a 350 degree oven for 35-40 minutes.


*I use regular flour and wheat gluten whenever a recipe calls for bread flour. Wheat Gluten will give your bread a higher rise, better shape & texture and will extend the freshness of your bread.

Irish Soda Bread Recipe


Irish Soda Bread


  • 3 cups All Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 1/2 cups Buttermilk (see substitution here)

Preheat Oven to 350 degrees. Place the baking powder, salt, sugar, and flour in a bowl. Stir in the eggs and buttermilk.



Next, sprinkle a little flour onto a clean surface and knead the dough 10 times. Shape the dough into a loaf. Grease a loaf pan ( I prefer to make bread in stoneware.) with cooking spray and place the dough loaf into the pan. Bake for one hour. Allow the bread to cool before removing it from the pan. This recipe feeds about 12 people and maybe 1 or 2 leprechauns.

    Easy Sourdough French Bread Recipe


    Easy Sourdough French Bread
    • 1 cup Warm Water
    • 2 1/2 tablespoons White Vinegar
    • 4 cups All-Purpose Flour
    • 3 tablespoons Wheat Gluten* (located in the baking aisle at the grocery store or Wal-Mart)
    • 2/3 cup Sour Cream
    • 1 1/2 tablespoons Sugar
    • 1 1/2 teaspoons Salt
    • 2 1/2 heaping teaspoons Yeast

    Measure ingredients and place in your Bread Machine pan in the order recommended by the manufacturer. Set on dough cycle. Watch the dough for a few minutes and add more flour if it is too sticky. When the cycle is complete place the dough (it will be sticky) in a lightly greased loaf pan and let it rise for another 30-40 minutes. Bake at 350 degrees for 25-30 minutes. Allow bread to cool in the pan for 10 minutes and then remove and cool on a wire rack.

      Country Inn Breakfast Bread Recipe


      I love homemade bread and now that the temperature outside is cooler I can start baking bread again.  Over the next several weeks I am going to share some of my favorite bread recipes.  This week I am sharing a recipe for Country Inn Breakfast Bread.  Just baking this bread will make your home smell like Fall!

      County Inn Breakfast Bread

      • 2 cups All-Purpose Flour

        Tippins Cornbread Recipe

        Tippins was one of my favorite restaurants,  not only did they have delicious pie but they had a wonderful cornbread that was more like cake than bread.  This recipe for cornbread is a combination of several different recipes and it is very close to Tippins cornbread.  I have also included a recipe for honey butter because you have to put honey butter on cornbread!

        Tippins Cornbread

        • 1/2 cup Cornmeal
        • 1 1/2 cups All-Purpose Flour
        • 2/3 cup Sugar
        • 1 Tablespoon Baking Powder
        • 1/2 teaspoon Salt
        • 1/3 cup Canola Oil
        • 2 1/2 Tablespoons Melted Butter
        • 1 Tablespoon Honey
        • 2 Eggs (lightly beaten)
        • 1 1/4 cup Milk
        Mix together the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl.

        Add in the canola oil, melted butter, honey, beaten eggs, and milk, and stir until moistened.

        Pour the batter into a 9x9 square baking dish and bake at 350 degrees for 35 minutes or until toothpick inserted in the center comes out clean.

        Serve with Honey Butter (recipe below).




        Honey Butter
        • 1/2 cup Butter (softened)
        • 2 Tablespoons Sweetened Condensed Milk
        • 5 Tablespoons Honey
        Place all the ingredients in a food processor or blender and process until smooth.  Refrigerate 2-3 hours before serving.

        Irish Soda Bread Recipe

        • 2 cups All Purpose Flour
        • 1 cup Whole Wheat Flour
        • 2 teaspoons Baking Powder
        • 1/2 teaspoon Salt
        • 1/2 cup Sugar
        • 2 Eggs
        • 1 1/2 cups Buttermilk (see substitution here)
        Preheat Oven to 350 degrees. Place the baking powder, salt, sugar, and both kinds of flour in a bowl. Stir in the eggs and buttermilk.

        Ultimate Recipe Swap: Whole Wheat Sandwich Bread



        Whole Wheat Sandwich Bread
        (original recipe here)

        • 1/2 cup Warm Milk
        • 1/2 cup Warm Water
        • 1 Egg
        • 3 Tablespoons Honey
        • 2 Tablespoons Butter (softened)
        • 1 1/2 teaspoons Salt
        • 1 cup All Purpose Flour
        • 2 cups Whole Wheat Flour
        • 1/4 cup Wheat Gluten** (available at the grocery store in the baking aisle)
        • 2 1/4 heaping teaspoons Active Dry Yeast
        Add all ingredients to your bread machine according to the manufacturer's directions and set on dough cycle.


        When dough cycle is complete, place bread dough in a lightly greased loaf pan. Cover and let it rise for 1-2 hours or until doubled in size.

        Bake bread at 350 degrees for 30-35 minutes. Remove from oven and let it cool for 10 minutes. Remove bread from loaf pan and let it cool completely before storing.

        Frugal Friday: Homemade Bread


        Store bought bread is expensive.  One of the ways that I cut my grocery budget is by making all of the bread for my family from scratch. It is a lot easier than you would think. I always use my bread machine to make the dough and then I prefer to bake it in the oven. There is nothing like hot, fresh, homemade bread from the oven!

        • 1 1/2 teaspoons Yeast
